Summer is a busy and hectic time of the year for many. With the kiddos out of school, vacations, traveling, etc. you’re probably not wanting to spend a lot of time in the kitchen. The weather is also getting warmer, so it’s normal for our food preferences to change with the seasons. Therefore, meals that were your “go-to” in the cooler seasons may not sounds good right now. I thought I would share some easy breakfast and lunch ideas that I make for myself (and Quinn) during the warm summer months.
BREAKFAST is my favorite meal of the day! I still crave warm oats even in the summer time, but also like to switch it up.
- Chia Seed Pudding
- Avocado Banana Smoothie
- Almond Butter Overnight Oats
- Vegetable Egg Muffins (this one is yummy too)
- Whole Wheat English Muffin + Cottage Cheese + Fresh raspberries + Honey Drizzle
LUNCH it doesn’t matter the season…I struggle with getting in a real lunch during the week. I find myself snacking and just picking off what I make Quinn for lunch. I feel SO much more satisfied when I actually prepare a balanced lunch, so I continue to make that a goal for myself. Some of these recipes are easy to make ahead and have ready to go in the fridge and when in doubt #5 is a life saver to have in the freezer!
- Greek Yogurt Egg Salad (sub Simple Mills crackers +/or raw veggies for the baguette)
- Avocado Egg Salad Roll Ups
- Chicken Avocado Pita Sandwich
- BLT pasta
