I’ve heard from a lot of you that making more home cooked meals and/or experimenting with new recipes were one of your intentions for 2020. I love sharing and swapping recipes, so I thought that’s what we could do today. My friend just got me this Run Fast. Cook Fast. Eat Slow. cookbook and I’m obsessed (and no you do not need to be an athlete to own this book and enjoy the recipes!) The recipes are easy and nutritious, so I recommend grabbing a copy of the book if you’re needing more recipe inspo. My other favorite “go-to” cookbooks is True Roots and It’s All Good. I want to check out Kelly Leveque’s new book Body Love Everyday too (fun fact… I went to high school and played soccer with Kelly). I’m also always on Pinterest and will pin recipes I’ve tried and loved, so follow us here.
Today’s I’ve rounded the top 5 recipes that have been on weekly rotation in my house. Warning I’m not good at plating my food and it doesn’t always look very pretty, but tastes good I promise! I’ve also linked all the recipes for you.
Turkey Meatballs + Zoodles/Banza Pasta This turkey meatball recipe is so dang good and you will have leftover for lunch the next day- score! I also just made the turkey meatball from Run Fast. Cook Fast. Eat Slow. and they were good too. I like to serve the meatballs over mostly zoodles + a little chickpea pasta (my husband likes more pasta to zoodle ratio). My favorite pasta sauce is Rao’s because no added sugar and tastes great!
Peanut Tofu Buddha Bowls You’ve seen us posting these bowls a lot lately because we are both obsessed (and so our the husbands!) A very easy and flavorful meal! Even if tofu isn’t your jam, I encourage you to try cooking it the way the recipe describes because it turns out really crispy and yummy. If you’re still not sold then sub in chicken for the protein!
Turkey Meatloaf I’ve also made this with organic bison and grass-fed beef and it still turns out great. I like to pair this with a simple side salad or roasted vegetables.
Egg Roll in a Bowl Shop for this recipe at Trader Joe’s so you can get all of the ingredients pre-chopped and ready to go making this recipe so quick and easy! I typically use ground turkey. The hubs loves it too (even requests it) and adds all the Sriracha to it.
Miso Salmon Bowls I use this miso recipe and love. You can build your bowl however you like, but I typically use quinoa then chop and roast whatever veggies I have in the fridge (asparagus, broccoli, brussel sprouts, zucchini, etc.)

I use avocado oil mayo. You could also try greek yogurt in place!

My favorite go -to every week! Baked salmon and broccoli/carrots 🙂 kid friendly too!
Line cookie sheet with foil
Lightly Salt and pepper the salmon
Mix concoction of spicy brown mustard or Dijon
A few punches of brown sugar and few teaspoons of soy sauce – in small fish
Baste entire salmon filet with mustard/sugar/soy glaze mixture
Bake in oven for 10-12 minutes at 400
If you like a Crispier salmon broil for the last few minutes – voila !
Usually serve salmon with roasted broccoli , roasted red potatoes and /or carrots – bake at 400 on cookie sheet with light olive oil, salt, and garlic powder – about 20-25 minutes or until desired (sometimes longer for potatoes) !
