You guys know I have a sweet tooth and when I made my husband those real deal chocolate chip cookies a few weeks ago for his birthday I probably ate like 5 cookies worth of dough in the process…and it got me thinking. I wonder if there is a way to make healthier cookie dough that also won’t put me at risk for salmonella if I eat it raw. Bam!
Ingredients
- 2 scoops Vital Proteins (I used this kind, but you could use any type of protein powder)
- 1/2 c almond flour
- 1/4 c almond butter
- 2 Tbsp coconut sugar
- 2 Tbsp mini chocolate chips (I used this dairy free kind)
- 1 tsp vanilla extract
- 1-2 Tbsp Macadamia milk (found here)
- you can use any dairy alternative or even water
Directions
- Mix all of the dry ingredients together in a bowl.
- Slowly begin to add in liquid of choice and mix until desired consistency is achieved.
- Refrigerate dough for 30 minutes
- Roll dough into 1/2-1 inch balls and store in freezer
About this recipe: Gluten free, dairy free, and soy free. This cookie dough is safe to eat (no raw eggs!) and is low in refined sugars. It is high in protein and healthy fats to keep you full and energized. Pop 1-2 of these bites for a pre/post workout snack or to satisfy your sweet tooth at night!
