Have you had your first pumpkin spice latte yet? Not my jam, but last weekend I treated myself to my first festive fall drink at Starbucks. I ordered a grande almond milk iced chai tea latte (2 pumps chai + 1 pump pumpkin) and it was so tasty!
It’s still pretty hot in Seattle right now (not complaining!), so I haven’t made the full transition into fall just yet. However, I did pick up a few cans of pumpkin puree at Trader Joe’s today in anticipation of diving into some new cozy recipes this season.
Today I thought it would be fun to share 10 fall recipes I’m looking forward to trying this season. Add these to your fall Pinterest (are you following us?!) board so you can revisit these recipes when you’re ready.
Pumpkin Chili this recipe looks pretty simple and straight forward for a cool fall evening. Since the recipe already has some greens in it, I would pair it with cornbread for the ultimate comfort meal (or pumpkin cornbread if you really want to go for it)! This turkey chili recipe also looks great if you don’t want pumpkin in your chili.
Pumpkin Muffins are on my list duh. These muffins would be the perfect snack with some almond butter spread on it…yum! They would also make a healthy snack or dessert for the kiddos. I like freezing half the batch if I know we won’t eat them all right away, so I can defrost and have a quick and healthy snack on hand whenever we need it.
Hello pumpkin smoothie of my dreams! This recipe sounds delicious and I would add a scoop of vanilla protein powder or vital proteins to it so it keeps me fuller longer!
Moving on from pumpkin, these stuffed acorn squash sound amazing. Instead of farro I might use a wild rice. Farro has more fiber in it than rice, but I don’t love the taste for some reason.
I used to make risotto all the time and can’t remember the last time I made it for whatever reason. It’s definitely a heavy dish, but so worth it every once and awhile! I will be making this pumpkin risotto for sure and sipping some wine with one hand while stirring with the other 😉
I’m not a huge pasta person, but OMG this pumpkin maple-glazed penne pasta looks like heaven in a bowl. I would use gluten free pasta and not change a single thing about the recipe!
During the cooler months, salads don’t sound as appealing, so I make soups often to get in my veggies. Enter the perfect + easy minestrone soup recipe! The best part is you will likely have leftovers for lunch the next day or two!
Now this is a pumpkin spiced latte I can get into! How amazing does this CBD-Infused PSL recipe sound?! I bet this would taste so delish using oat milk (best kind to buy IMO).
