While I do enjoy cooking, and preparing well balanced meals for my family, it doesn’t happen every night. I don’t have the time and/or energy to make a recipe nightly, and we definitely have nights when it’s a chopped kitchen situation in our house. And if it’s a night when Ross isn’t home or is eating leftovers I don’t want I will 100% be making a “girl dinner”.
“Girl dinner” is a fun TikTok trend at the moment, but has been around forever. Who hasn’t had cereal or a bowl of popcorn for dinner on those very lazy evenings. There is nothing wrong with having an unbalanced meal every once and awhile; however, I don’t always feel full and end up snacking more throughout the evening.
Here are 5 “lazy girl” *balanced* dinner ideas I will throw together when I’m making dinner just for myself and have zero energy.
- Trader Joe’s Cauliflower Gnocchi
I have started to cook the gnocchi in the air fryer and it’s much easier and makes them crispier. I’ll mix the cooked gnocchi with the kale pesto + steam frozen peas or broccoli + Trader Joe’s shelled edamame for extra protein. - Frozen Banza Pizza
This is a new product from Banza and I really like it. Caulipower also has a good BBQ chicken frozen pizza. I’ll add a bagged salad for some veg and call it good! - Mac & Cheese
If I’m making the girls Goodles or Banza mac & cheese (my 2 favorite brands for mac & cheese) I’ll steal a cup and mix in + edamame + broccoli (or peas). - Raos Meatballs + Cappello Pasta
Both of these are found in the frozen section at grocery stores like Whole Foods. - Caulipower Chicken Tenders
I find these in the frozen section at Whole Foods. I pop them in the air fryer and throw on some greens or will make them into a chicken Caesar wrap. I’ll get a tortilla, add some Romain lettuce, cheery tomato, avocado, and drizzle Caesar dressing.
