Yes, I know you could just search Pinterest on this topic and get like a million different ideas, but I’m going to give you my top 7 anyways. Why? Because I need the motivation myself. I don’t know what it is about summer (that’s what I’m blaming it on) but I have not been motivated to meal plan, prep, or get very creative in the kitchen. I’ve been making the most basic oatmeal or having a Perfect Bar for breakfast and I’m feeling so unsatisfied. I just saw someone post this beautiful picture of avocado toast with peaches and mircogreens and that was the kick in the butt I needed to get back on track with making breakfast a priority! (I copied that avocado toast idea in the picture below and it was SO good!)
If I don’t have a balanced and satisfying breakfast it sets me up for a day of snacking. Having a well balanced breakfast is key for stabilizing your hormones and blood sugar first thing in the AM, and will help prevent an insulin (and energy) rollercoaster all day long.
Here are 7 breakfast ideas that are easy to prep ahead of time or first thing in the AM that will get you excited about your morning meal again!
- Egg Breakfast Cups Many people find it hard to get in enough protein with breakfast…hello egg cups! There are a bunch of different recipes out there, but I’ve tried and loved this and this one. This recipe also looks really good. Egg cups are super easy to make and versatile. This means you can add and subtract whatever ingredients you want. Add in some extra chicken apple sausage slices or bacon bits, or try different veggies or spices to make it your own. Store in an airtight container in the fridge and heat up 2-3 “cups” in the morning with a side fruit and you’re all set for breakfast!

- Overnight Cashew Oats I just made a double batch of this for my postpartum sister and she was in shock at how good these tasted and she was adamant that I should sell pre-made oatmeal cups to people. Haha, but this recipe is THAT good.
- “Fancy” Toast My husband makes peanut butter toast every morning. 7 days a week. I’m seriously bored for him, but he says he likes it so you do you boo, but I need more excitement.
- Toast Combination Ideas:
- banana + almond butter + chia seeds
- avocado + fried egg + microgreens + “everything but the bagel” seasoning
- cottage cheese + pineapple + cashews
- avocado + sliced peaches + crushed pistachios + microgreens
- sliced pear + ricotta + honey
- hummus + pomegranate + crushed walnuts
- cream cheese + sliced tomato + fried egg
- sun butter + sliced plum + hemp seeds
- cream cheese + smoked salmon + cucumber + “everything but the bagel” seasoning
- Toast Combination Ideas:
- Protein Pancakes I love making a big batch of these and keeping them in the freezer for a quick and easy breakfast. My favorite recipes are here, here, and here! Top with greek yogurt or nut butter for extra protein and fat to keep you full!
- Muffins/Oatmeal Cups Just like the pancakes I like to make a batch or 2 and keep stored in the freezer. Defrost and add a packet of nut butter or yogurt and you’re set! THIS is my most favorite muffin recipe…it is a little labor intensive on the front end with needing to soak some of the ingredients, but so hearty and delicious! - Hearty granola + Yogurt + Fruit My all time favorite granola recipe is the “clean granola” from Goop. Assemble in a mason jar by layering yogurt (opt for plain greek yogurt or almond/coconut milk yogurt- check sugar content) granola and fresh berries. Easy to eat on the go!
