This week I am sharing another “What I Ate Wednesday”, but this day is a little different because I’m taking you through a typical workday. If you did not read my last WIAW check it out here for a disclaimer on the purpose and my intention of these types of posts.
Someone recently asked on Instagram if I’m a practicing Dietitian… and the answer is yes! I currently work one day a week at a local college in their health and counseling center. I really love working with the college age population and it helps me keep my nutrition skills (and resume) up to date. Best part of the job…I get summers off 🙂
But let’s be honest…how average/bad was your college cafeteria food? Woof! I try not to rely on having to grab something on campus, so I try my best to plan ahead and have my breakfast, lunch, snacks, and beverages packed the night before.
Hopefully this will give some working moms an idea of easy meal and snack ideas for the office.
7AM: I am out the door! I usually get to see Quinn before I leave because she is up between 6-6:30. I have my lulu bag packed to the brim with all the goods! I’m obsessed with my hydro flask water bottle…mine is 40oz and I try to drink 1-2 a day depending on what other fluids I’m getting in.
8AM: I get into my office around 8am. I drink my coffee + vital proteins on the way to work and I’m SO ready for breakfast by the time I get to work. Breakfast today was overnight oats + chia seeds made with homemade almond milk. Before leaving for work I topped it with raspberry chia seed jam (here is the recipe) and a scoop of cashew butter (my fav kind right now).

10AM: Usually I have a snack at this time (nuts, apple, cottage cheese…) but this morning I was booked solid in the AM with students then had an 11am staff meeting, so I quickly grabbed a cold brew coffee + soy milk for a little pick me up. Gotta bring my reusable cup to avoid the stank eye from the very environmentally friendly college students I work with 😉
12PM: It was a nice day, so I got to enjoy my lunch outside…needing that fresh air! The night before we had taco salad for dinner, so I kept all the ingredients separated and assembled my left over taco salad in the morning. I brought some Siete chips (lime is the best flavor) to top it off and of course a La Croix for some bubble water. I always need something sweet after lunch and dinner, so I brought these Simple Mills cookies. Hit the spot!
4:30ish: I was able to leave work a few minutes early and get on the road before traffic gets crazy. Obviously I made a quick pit stop at Starbucks for a grande 1/2 green 1/2 passion iced tea (no water, no sweetener) to go with my Rx bar. I like this flavor, but recently tried coconut chocolate and I think that might be my new fav at the moment.
7:30PM: I got home from a Corepower Yoga sculpt class…it was killer!! I usually get a workout in before coming home because my husband gets home early to hang with Quinn and do the dinner and bed time routine with her. Since I get home late, I typically opt. for a lighter dinner because I’m headed to bed in the next hour or so. I made one of my Daily Harvest smoothies and made some additions to make it a complete meal. (link here if you want to get 3 free cups!) Yep…I’m taking my smoothie to the shower with me because I need to shower about as bad as I need to eat 😉
8:30PM: Dessert time! I’m obsessed with these Eating Evolved coconut butter cups. The mint one is my favorite flavor, but caramel is good too!
9:00PM: Time for an episode of Heart of Dixie (my current Netflix binge show #teamwade) and bed!
